Na UE, cerca de 2,5% da popula\u00e7\u00e3o trabalha em cerca de 12 milh\u00f5es de fazendas. Compare isso com a China, onde cerca de metade da popula\u00e7\u00e3o trabalha em cerca de 600 milh\u00f5es de fazendas. Parece um n\u00famero imposs\u00edvel, mas na realidade eles est\u00e3o se consolidando rapidamente. Mais de 78% da China eram trabalhadores rurais em 1978, e as pol\u00edticas governamentais sobre direitos de terra e tecnifica\u00e7\u00e3o acelerar\u00e3o essa tend\u00eancia.<br \/>\nA China est\u00e1 no processo de mover sua for\u00e7a de trabalho para as cidades para produ\u00e7\u00e3o em outras ind\u00fastrias, uma transi\u00e7\u00e3o que o Ocidente empreendeu h\u00e1 cerca de um s\u00e9culo. Em 1900, cerca de 38% da for\u00e7a de trabalho nos EUA trabalhava em fazendas. Em 1920, 27% da Am\u00e9rica trabalhavam em 6,4 milh\u00f5es de fazendas, e ent\u00e3o a Grande Depress\u00e3o chegou.<\/p>\n<p>Os problemas financeiros do mundo levaram os trabalhadores das fazendas para os centros urbanos em busca de trabalho, um movimento que continuou at\u00e9 o final do s\u00e9culo XX. Os moradores das cidades desfrutaram de rendas mais altas trazidas pelo boom do p\u00f3s-guerra.<\/p>\n<p>A estabilidade econ\u00f4mica rec\u00e9m-descoberta significava que as pessoas podiam comprar alimentos de melhor qualidade, riquezas que pareciam inating\u00edveis em meio aos dias sombrios da Depress\u00e3o e da Guerra Mundial. Na d\u00e9cada de 1930, um dos vegetais mais consumidos nos EUA era o dente-de-le\u00e3o. Nutritivos e abundantes, eles sustentavam in\u00fameras fam\u00edlias durante uma \u00e9poca em que o desemprego de 25% for\u00e7ava grande parte do pa\u00eds a procurar comida.<\/p>\n<p>A prosperidade do p\u00f3s-guerra e a expans\u00e3o suburbana substitu\u00edram os mercados agr\u00edcolas por mercearias, e n\u00f3s voluntariamente evitamos nossa conex\u00e3o com os campos. Nossos jantares deixaram de ser um reflexo dos campos em vez de receitas de livros que usavam ingredientes ex\u00f3ticos, pois as pessoas buscavam uma vida que se assemelhasse mais a &quot;O Grande Gatsby&quot; do que a &quot;A Boa Terra&quot;. T\u00e3o total era o desd\u00e9m por s\u00edmbolos de tempos dif\u00edceis que hoje \u00e9 dif\u00edcil encontrar algo como vinho de dente-de-le\u00e3o ou folhas de dente-de-le\u00e3o at\u00e9 mesmo nos restaurantes locavore mais badalados.<\/p>\n<p>Este renascimento culin\u00e1rio deslocou nossa compreens\u00e3o coletiva dos sistemas agr\u00edcolas. A tecnologia come\u00e7ou a moldar todas as ind\u00fastrias, incluindo a agricultura, mas perdemos nosso paladar para a compreens\u00e3o agr\u00e1ria. A Revolu\u00e7\u00e3o Verde inaugurou uma era de aumento de produtividade, diversidade de culturas e alimentos baratos. Ningu\u00e9m questionou como, at\u00e9 a Primavera Silenciosa. Naquela \u00e9poca, a tecnologia agr\u00edcola estava se movendo t\u00e3o r\u00e1pido que os 99% de pessoas removidas da vida agr\u00edcola estavam completamente confusas sobre o que estavam comendo e como era produzido. Sempre haver\u00e1 fan\u00e1ticos e te\u00f3ricos da conspira\u00e7\u00e3o que se recusam a reconhecer o grande trabalho que o agroneg\u00f3cio est\u00e1 fazendo, muitas vezes sem ideias alternativas. Mas a mar\u00e9 est\u00e1 mudando \u00e0 medida que as pessoas redescobrem sua conex\u00e3o com a comida e a conex\u00e3o da comida com a humanidade.
